gluten free baked rotini


This recipe is simple to make and so delicious. Coming from an Italian family, my mom always has cooked baked pasta dishes but they always had gluten and they were never very healthy. I made my own version by using gf pasta and adding veggies instead of tons of cheese!

Recipe:
-box of Barilla gluten free rotini pasta
Favorite 
-jar of favorite pasta sauce(I use Classico tomato & basil) 
-fresh tomatoes and brocolli (add whatever other veggies you want)
-mozzarella cheese
-basil, garlic, salt, and pepper to taste
-olive oil 

In an oven safe baking dish, add layers of pasta, sauce, and cheese. Mix the vegetables of your choice throughout the dish. On the top layer coat with a drizzle of olive oil.
Bake @400 until lightly browned on top.

Natural and dairy free root beer floats!

Sometimes I crave things from my childhood and since I work at an ice cream shop, I get tempted to indulge in unhealthy treats. Root beer floats are a guilty pleasure of mine, and I just came up with a delicious combination to make an all natural/organic and dairy free float! I use Maine Root root beer. I buy it at whole foods and it's a little pricey but worth it. I use coconut bliss vanilla island coconut milk ice cream which is so creamy and delicious. The root beer is fair trade and all natural and the "ice cream" is organic! 

Fact about Coconut milk: It is high in healthy fats and vitamins and improves immune function.
