Vegetable Lo Mein

Chinese food is something that lots of people love and crave, but most has so many added ingredients and msg. The recipe I made was very easy and great if you don't want to spend a lot of time in the kitchen prepping food but want that Chinese food flavor. I bought a bottle of Wegmans  Organic Sesame garlic sauce that has a lot of ingredients lo mein sauce has to save time(and without bad ingredients!) Wegmans has a lot of healthy prepared food or veggies ready to go if you don't have a lot of time in the kitchen or want a quick meal!

Recipe:

  • 1 package of Thai kitchen stir fry rice noodles 
  • 1 package of prepared stir fry veggies (mine had carrots, snap peas, shiitake mushrooms,red pepper, and scallions) 
  • 1 clove of garlic chopped 
  • 1/2 tbs of chopped fresh ginger 
  • 3 tablespoons of gluten free soy sauce
  • 1/4 cup of wegmans sesame garlic sauce (add more as desired) 
  • 1 tablespoon of olive oil

In a large pan, add olive oil, ginger, garlic, and veggies. Sauté until the veggies soften a bit but are still vibrant in color. When you over cook vegetables they loose their nutrients! Follow instructions on Thai kitchen stir fry noodles, and mix the noodles in with the veggies and add sauce and soy sauce. Enjoy!!!

Ps- if you have more time, feel free to buy your own veggies and prep them! Buying already washed veggies just saves time!

vegan peppermint patties

One of my favorite treats are peppermint patties. Yorks peppermint patties have diary, eggs, corn syrup, and artificial flavorings. I came up with a vegan recipe that has quality ingredients, and tastes just as good!

Recipe:


  • 1 1/4 cup of powdered sugar
  • 1 tablespoon of unsweetened vanilla almond milk
  • 1 tablespoon of extra virgin organic coconut oil
  • 1 1/2 teaspoon of peppermint extract or oil (depending on how much peppermint flavor you want, you can add more or less)
  • dark chocolate baking chips


Melt the coconut oil and mix all the ingredients except the chocolate chips together. The consistency of the mix will be thick. Mold it into a ball with your hands and roll it out into a long tube like shape. Place in the fridge for 45 mins or until firm. When it's firm, cut the peppermint sugar into 1/2 inch circles. Melt the chocolate. Drop the peppermint circles into the chocolate and coat evenly. I used a fork to take them out, and I placed them on parchment paper. Continue this step until all of your peppermint coins are covered. Place back in the fridge for 30 min to cool and set. Enjoy!!!

Peppermint oil has many medicinal benefits including stomach pain aid, relieves headaches, helps improve mental focus, fever reducer, and it improves indigestion , bloating, and nausea. Coconut oil also has many Heath benefits.

These treats might have sugar, but at least the added ingredients are healthy and beneficial!
