Recipe:
- 1 1/4 cup of powdered sugar
- 1 tablespoon of unsweetened vanilla almond milk
- 1 tablespoon of extra virgin organic coconut oil
- 1 1/2 teaspoon of peppermint extract or oil (depending on how much peppermint flavor you want, you can add more or less)
- dark chocolate baking chips
Melt the coconut oil and mix all the ingredients except the chocolate chips together. The consistency of the mix will be thick. Mold it into a ball with your hands and roll it out into a long tube like shape. Place in the fridge for 45 mins or until firm. When it's firm, cut the peppermint sugar into 1/2 inch circles. Melt the chocolate. Drop the peppermint circles into the chocolate and coat evenly. I used a fork to take them out, and I placed them on parchment paper. Continue this step until all of your peppermint coins are covered. Place back in the fridge for 30 min to cool and set. Enjoy!!!
Peppermint oil has many medicinal benefits including stomach pain aid, relieves headaches, helps improve mental focus, fever reducer, and it improves indigestion , bloating, and nausea. Coconut oil also has many Heath benefits.
These treats might have sugar, but at least the added ingredients are healthy and beneficial!
